Baker and Spice

Baker & Spice is passionate about sharing simple and fulfilling food of the highest quality with our friends and neighbors.

In 1998, we became part of the vibrant Portland and Hillsdale farmers markets. In recent years, our much-loved market stand has evolved into its current form: a warm and bustling neighborhood bakery featuring traditional and seasonal bread and pastry.

Throughout the day in our Hillsdale shop, we bake everything from scratch in small batches. We use our own recipes, traditional methods and the highest quality ingredients: European-style butter, Belgian chocolate and seasonal produce from local, organic farms.

This care and these ingredients make Baker & Spice pastry, savories and bread fantastically good.

About Baker & Spice

We created our Hillsdale bakery to be a warm, inviting and easy space to spend time enjoying delicious food. The kitchen is wide open by design: we want you to see who we are and be part of what we do.

We’re proud that the materials we used in the renovation of the former Hillsdale Pastry Shop are largely recycled, sustainable and that the space was designed and crafted by Julie’s husband, Matt, of Matt Kappler Woodworking.

We’re so happy to feature a frequent rotation of work from local artists in our space.

Our small batch philosophy and attention to quality are values shared by friends whose farms provide us with local, seasonal and mostly organic product: Gathering Together Farm, Your Kitchen Garden, West Union Gardens, Deep Roots, Baird Family farms, Kiyokawa Family OrchardsViridian Produce and Creative Growers.

Supporting other local business is a priority for us too, including our beverage partners: Cellar Door Coffee Roasters and The Tao of Tea. We are also thankful for our photography friends John Valls and Amy Madans.

Our delicious cakes needed more room to grow so in the winter of 2013 we opened the doors to our sister cake shop- The Cakery, just 8 doors down from the Bakery.  You’ll find locally crafted gifts, tea towels, a library of hand-picked baking books, rolling pins, glassware and vintage touches.  The Cakery also plays host to a pop-up author event series called Pages to Plate and loves bringing these guest author/chefs in to teach lessons from their latest books.


We have made it a priority to give back in ways that are both meaningful to us and make a difference for our community of friends and neighbors. We make contributions to local schools, shelters and other organizations on a daily basis with an emphasis on education and Portland’s sustainable food culture. For donation requests, please download and fill out our Donation Request Form and drop it off or email it to donations(at)bakerandspicebakery(dot)com. We review donation requests on the 15th of each month, so it’s best to submit the form at least a month in advance.
